Spicy Shrimp Curry


300 g shrimp (cleaned head and tail off)
3 tbs finely diced onion
2 tbs finely diced tomato
minced fresh parsley
Olive oil
Juice of half lime
2 tsp curry powder
1 cup good quality coconut milk
1 tsp each of IHOF All purpose savoury, Garlic, Peppers and herbs, Hot pepper mix


1 Rub the lime juice and a pinch of the spice mix into the shrimp and set aside for about 15 minutes
2 In a pan, heat up some olive oil and sauté the shrimp for about 2-3 minutes over medium heat (be careful not to burn them), then remove the shrimp from the pan 
3 In the same pan, add the onions and fry till translucent , add tomato, the rest of the seasonings/curry powder and fry for 5 minutes (stirring continuously)
4 Add the coconut milk and cook 5 minutes, add the shrimp and simmer for another 2-3 minutes
5 Turn off heat and finish off with some chopped parsley 
6 Serve as is, or with some rice or potatoes
